The Craft
Ice Wine Production
“It's the most awarded product that we have.”
— Andrea Colaruotolo O'Neil
Casa Larga's ice wine is a labor of love. The grapes are intentionally left on the vine long after the traditional harvest, waiting for temperatures to drop to 14–15°F. Harvest crews often begin picking at midnight, pressing the frozen grapes before they can thaw.
By the Numbers
- Grapes are intentionally left on the vine to freeze naturally
- Harvested at 14-15 degrees F, sometimes starting at midnight
- 1 ton of ice wine grapes yields approximately 15 gallons versus 150 gallons from traditional winemaking
- For every bottle of ice wine produced, four bottles of traditional wine could have been made
- Ice wine starts at $40 per bottle
