Recalling the wines of his youth in Italy, our founder, Andrew Colaruotolo, created this zesty white wine reminiscent of Pinot Grigio.
Viticulture
Grapes. Vidal Blanc, Riesling, and Muscat Ottonel
Appellation. Finger Lakes
Viticulture notes. The grapes used in the production of this wine are cold-tolerant, making them ideal for the northern Finger Lakes region: Riesling and Muscat Ottonel (vinifera), and Vidal Blanc (French-American hybrids). We train their vines higher on the trellis than other varieties and they grow downward in an umbrella-like pattern.
Winemaking

Fermentation. In stainless steel tanks at cool temperature.

IRF scale. Medium Dry
Aging. In stainless steel tanks for approximately 6 months.

Winemaking notes. We cold ferment all three component grapes of Pallido in stainless steel tanks to bring out the beautiful natural fruit aromas and flavors of the grapes.

Aging: Store at cool temperature (about 55º) and out of direct sunlight. This wine, like most un-oaked white wines, was produced to be enjoyed while young and fresh, i.e. within roughly 2 years of bottling.
Serving temperature: Chilled to about 50º
Tasting notes. A zesty, un-oaked, medium-dry white wine, Pallido has been a perennial favorite of our customers since its creation in 1986 by our founder, Andrew Colaruotolo.
Pairing suggestions. Antipasti like prosciutto e melone, and Italian veal and poultry dishes such as scaloppini, piccata, and saltimbocca.
